Is it appropriate to use the flag once it has been folded and presented at a funeral?...
Not really. While there are no specific rules in the U.S. Flag Code addressing use of the American flag after presentation at a funeral, in general the most fitting use of the flag is to display it, just as it was folded and presented, in a display case. They are easy to find and you can have the decedent's name and service information engraved on a plate.
Since the sign is given as a matter of gratitude and respect for the service of veterans, it should be displayed in just such a manner.
